Cheesecake with Red Berry Sauce
Ingredients – Crust:
200 g graham crackers (or plain sweet biscuits), crushed
100 g butter, melted
Ingredients – Filling:
400 g cream cheese, softened
1 can (about 395 g) sweetened condensed milk
2 eggs
1 teaspoon vanilla extract
Ingredients – Sauce:
1 cup red berries (strawberries, raspberries, blackberries, or mixed berries)
½ cup sugar
Juice of ½ lemon
Instructions:
Crush the biscuits and mix with the melted butter until you get a moist crumb mixture. Press firmly into the bottom of a springform pan. Chill in the freezer for about 5 to 10 minutes to set the crust.
In a bowl, beat the cream cheese, condensed milk, eggs, and vanilla until smooth. Pour over the crust and bake in a preheated oven at 180°C (350°F) for about 40 minutes, or until set. Let it cool, then refrigerate.
For the sauce, combine the red berries, sugar, and lemon juice in a saucepan over medium heat. Cook until the sauce thickens slightly. Let it cool and spread over the cheesecake before serving.
